Grapefruit

Fri May 14, 2010 2:50 pm

I recently had an IPA on cask at a local pub. It had a fantastic grapefruit aroma and flavor. I'd like to bring the same to my IPA next time. Anyone have thoughts as to which hop to add and when to get the grapefruit character? Is it a flavor hop, aroma hop, or dry hop addition? Or perhaps all three.

For the curious it was Clipper City Heavy Seas Loose Cannon Hop3.

If you can find them Riwaka hops from new zealand give a phenominal grapefruit character. I made a pale ale last year that I will make again as soon as these hops become available again. I think next time I make it I will add some grapefruit zest to really kick it up a notch this might be something you may or may not want to look into. Otherwise cascade is well known for its grapefruit characteristics.

Prost!

Dry hop the shit out of your IPA with Centennial and you'll be happy too.

Cascade and Simcoe are your best bets, from 20 minutes to dry. I've also heard Ahtanum is a good one for the grapefruit, but I haven't used it. I like to mix those two with Centennial or Amarillo to keep it from being overly grapefruity.

I agree with the simcoe, amarillo, and cent. Cascade can sometimes as well. Blend them all, esp. heavy on the simcoe, late in the boil and some dry hopping. That should get ya there.

Thanks all. Bottling an ESB tomorrow. Brewing a blonde ale next and then I think I'll tackle the IPA again with these hop suggestions. Appreciate the feedback.
