Soriachi Ace Hops Flavor

Sat Mar 27, 2010 8:12 am

I recently bought Soriachi Ace hops (Whole Flowers) because in the description it says the hops have a citrusy flavor, notably Lemon. I like the citrus hops and I thought that a lemon flavor would be nice in a summer wheat beer.

Anyone use a flavor addition of this hop? I am looking for some feedback on how lemony it is. Any specific info on time of flavor additions to the boil as well as quantities used would be helpful to me as well.

I intend to lightly hop a wheat beer and use enough of this hop to give a lemon citrus flavor then add cranberry extract prior to bottling so I don't want to totally hide the lemon.

Thanks for any info or experiences.
Well that keg disappeared fast!

I haven't use this yet, but I want to. I'm planning on making a lemon honey hefeweizen as soon as I get my mits on some of these.

Well I have 6 oz for a ten gallon batch of wheat beer that I was planning for fall. However. I've gone through 2 kegs this month on the new kegerator instead of the planned for 1.5 kegs and if that's any indication I'm going to need an extra batch before my brew season is done. So, A Cranberry Lemon Wheat beer will be coming up soon. I'll post my findings here.

In the mean time I'd still like to know how others are using it and a review of the flavor intensity in any beer.

I've been using them quite a bit. AWESOME aroma hop in american pale ales. I also dry hopped an ESB with it and liked the results (though it no longer tasted like an ESB). It's very citrusy, but has a nice, woody character to it as well. I think this is a hop that could really catch on with the homebrew crowd as it is a whole lot of fun to play with.

The brewery down the street from me has been messing around with it a lot in cask beers, so I've been getting to try it in a lot of different types of beers as well.

I've tasted a lot of beers with it, though I haven't brewed with it. It's certainly an assertive, somewhat fruity/floral, lemony flavor. Not as sharp a citrus as you might expect. Fairly strong pepper character to balance it. It's a nice hop, and it should mesh well with either spicy or citrusy hops.
