Oh, on the boil off rate-
I keep it at a very light boil, it's turning over with the occasional gush of bubbles. I'm curious if the pot I use which is 6 gallons and about twice as tall as it is wide has less surface area combined with less heat means a lighter boil off. I'd like to be able to have a higher volume boil because after racking to the fermenter and racking off the yeast I only end up with about 4 final gallons.
