mushroom beer

an old friend came over and now i have a few mushrooms laying around. can i add them to a beer. i heard if you soak them in tequlla that works too. im just curious.

I have read they should be soaked in vodka, or chopped and tossed into the boil.

In "Radical Brewing", Mosher talks about his "Nirvana Chanterelle Ale". He makes what looks like a strongish Belgian dubbel, all the way through fermentation. He also soaks 1/2 lb of chanterelle mushrooms, soaks them in vodka for a couple weeks, then strains it all through a coffee filter. The vodka gets added to the beer right at bottling/kegging time (the mushrooms themselves get discarded).

Idunno if it sounds tasty to me, but there you go.

I have heard a certain homebrew legend makes this. You might try contacting Denny Conn about this in a pm or on one of the other forums. I have seen him mention doing this on the northernbrewer forum a few times.

hmm maybe use whiskey and add it to that porter recipe i hear such nice things about. or even and otmeal stout with a hint of scotch or something like that.

Denny does make an awesome mushroom beer. He calls it the Wee Shroomy. He uses Chanterells that he picks from his yard. Last year, he soaked them in vodka. This year, he just put them into his fermenter raw.

Having sampled both, I think that this years, with out the soaking, was much better. The mushrooms give the beer a somewhat apricot flavor. Very delicate. Quite nice.
