Bottle Conditioning a Russian Imperial Stout

Mon May 26, 2008 2:50 pm

I brewed a 10 batch of RIS. I would like to bottle condition 5 gal. of it, but haven't bottled in years. The starting gravity was 1.102 and the gravity as of now is 1.028 with little to no activity in the air lock. Do I need to add any priming sugar? Do I need to pitch more yeast? I don't want to make bottle bombs, but don't want a flat RIS. HELP!

I think it would be okay to add about 3/4 cup of corn sugar to prime. At 1.028 you shouldn't need any yeast, but if you do decide to add some, use HALF a tube and cut the corn sugar to 1/2 cup. This should give you the correct carbonation.
Also, listen to the Jamil Show on RIS and that should help out too. Good Luck and Cheers!

How long has it been in the fermenter?
