Tasted a sample of the 8.9% Azacca IPA I brewed a week or two ago (flat and warm, it still tastes pretty good). Getting ready to keg it, it was the first beer I've brewed since November...

Just pitched yeast into a Scottish 60/- based on Nate Smith's Loose Change recipe. I moved the hop addition up to 30 minutes and adjusted the amount to give the same IBU but leave a bit of EKG hop character behind (yes, I know it isn't correct to style but I like it).

Also kegged an english bitter and an american bitter (mosaic and apollo hops). If only the cold maturation didn't take time....

That is "sparge", not spooge Lee! Now who is the dirty one?

Got my boil going on a special bitter recipe I have been wanting to brew for over a year. Hope it turns out as expected. Finally getting a bit closer on dialing in my target mash pH using Brun water spreadsheet.

Just ran off an ESB into the fermentor. This is the first wack at making a clone of the Maizie's ESB at Dog Street Pub in Williamsburg. Rinsing some 1968 to repitch into it.
