Substitute for CarafII in JZ's Dunkelweizen recipe.

I don't have any Carafa II for this recipe. It calls for 2 oz. Any suggestions.? Chocolate possibly?

I brewed an awesome Dunkelweisen last year based on Gordon Biersch's recipe. It had no Carafa at all in it.
The recipe is pretty straight forward:
2 lb light Munich
2 lb British 2 row (maris otter)
5 lb dark wheat malt
2.25 lb wheat malt
5 oz chocolate wheat malt
5 oz carawheat

mash at 149 for 90 minutes

18 IBU of Tettnang at beginning of 60 minute boil.

I also use lots of rice hulls for obvious reasons.

Thanks Bug - How does the flavor profile of Chocolate Wheat compare with Chocolate Malt? I'm pretty sure JZ was using the Carafa II just to adjust the color of the beer. 3 oz of Chocolate puts me almost dead on the color of his recipe. I don't think 3 oz will add a very noticible roast character to the beer.

Belgian debittered black malt may work as well. What about Carafa III? Or as Bug said, chocolate wheat malt.

I've not done a side by side comparison of the chocolate and chocolate wheat, but my impression is that they are similar.

I don't have the recipe in front of me, but I believe the recipe calls for Carafa Special II (the dehusked version). You could use chocaloate malt of a similar lovibond but it would be a bit more astringent due to the husks.

You could crush the malt and pick out the husks, sift them out, or toss the grain in front of a fan to get rid of the husks.

You could also add the chocolate malt to the top of the mash at sparge to extract more color vs. flavor. Or do the cold steep method that Gordon mentions in his new book. At any rate if you practice good sanitation, pitch a good healthy yeast starter, and control ferment temps the beer will turn out great. RDWHAHB :D
