I think that the Wit is a good choice - sorghum (and especially the extract which is mostly made from unmalted sorghum)has a distinct tangy, tart taste. The sort of thing that would go nicely enough in a Wit or Saison... But can be really off-putting in an attempt at a lager or pale ale etc.
that's why I have been playing around with millet and other grains... Trying to get away from the sorghum tang because I am trying to reproduce a mega lager for a non beer geek cousin. Sorghum beers just don't taste right.
