I've tried most of the major brand pilsner malts and settled on Weyermann some time ago. I use it as the base for my German-style and Belgian-style beers. It's my personal fave. Very distinctive melanoidin characteristics and very clean IMO.

I know one Gordon Biersch location uses Weyermann's "Bohemian Pilsner" Malt, not their regular Pilsner malt. I just recently had a tour of the Columbus, OH location by the brewer and saw sacks of the Bohemian Pilsner in the mill room and he said that's their base malt. I plan to start using the Bohemian to see what the mash and flavor differences are, haven't tried to order any yet.

Fermenting: Cider, Azacca Oat Pils, Egregious-ish, Lambic, Carrot Blossom Cedar Mead, Brett Helles
Drinking: RIS, Doppelbock, Sauerkraut Gose, Lambic, Brett Blonde, Kriek, Saison, Rye Berliner
Barrel aged: RIS, Rye Barleywine, Tripel

I believe this is a floor malted heirloom cultivar. AFAIK it is not available to homebrewers yet (if if it ever will be).

Midwest really has it's finger on the pulse of uber-homebrewers. Bavarian pilsner malt, biofine clear...

That's cool! Don't much like the price but I'd like to try the stuff. If they can get it my LHBS can get it. I'll have to blow in his ear.

I'm no AJ but I'll also report back if I can get some (bohemian pilsner malt that is).
