The Ropiness would be from the Pedio. I don't think its visible from the top of the beer, its different then a pellicle. If you do a sample of the beer and its slimy then the Pedio isn't finished yet.

My JZ's Flanders is at 12 months and is turning out nicely, going to allow it 6 more months then do a solera.

If your beer does become ropey (not all do), then brett will clean up this kind of "sickness" as well as any extra diacetyl produced by the pedio in the beer.

OK, I wikipediad it, and it sounds very interesting. Could you explain the 'solera-ing' process that you will use? It sounded like making a gueuze sort of.

A typical solera is done (usually in a barrel) by pulling off a portion of the finished (or somewhat) beer for packaging then adding back freshly fermented beer for continued aging on top of the original portion. Batches can be pulled at any time really ranging from every few mos, to every 6 mos or what have you. the goal is to continue to use the present microflora (bacteria, wild yeast) and continue to sour the beer for increased complexity.
