Spicy, Resiny Hop?

Wed Jun 30, 2010 8:08 am

BNers,

I am looking for a spicy, resiny hop to finish a mock bock (bock grain bill fermented with ale yeast) with. Everywhere I read says to use Hallertauer to finish a bock with, but I fear that it may be too mild of a hop for my taste.

Suggestions? I hear good things about Tettenanger, but maybe a Fuggles would give me what I want? I definately do not want any citrus character, and as little 'fruity' character as possible.

Thanks!

I thought spalt was the traditional hop of bocks (though jamil says the character throws a lot of judges off who don't know the flavor)

I'd try either Spalt or Northern Brewer.

I really like Mt Hood, its got this distinct flavor for me. Full Sail uses it.
