Just watched it. Pretty cool episode - made me want to try open fermentation some time. I have always fermented in non-see-through vessels like buckets and kegs, so seeing the krausen and general yeast activity was nice.

Hope they follow it up on a future episode with a tasting of the beer and note the characteristics from the open fermentation.

I am curious what an open fermentation sour beer would do? Would it be too much yeast character? How long to keep it open? I know Cantillion starts out open but then finishes closed. Does anyone know the time frame though?

Well, the fermentation of Dawson's topless Hefe was successful! He's kegging it this weekend, and we'll be doing some tasting notes on Monday/Tuesday. The report will be on next week's episode, 6/11.

Frankly, I'm surprised that the various cooties in his beard did not infect the beer...oh well, he must have been showering the week for a change.

looks like he might have had some concerns about the beard too. Where did that shag go in episode 5?

For awhile there, I was jealous that Dawson had more hair on his head than I have over my entire body! Seriously, that beard is almost Texas Blues Guitar Style!
