I brewed an all hopped summit pale ale last summer, very garlic like. Bleah... No summit hops for me.

Seems like most recommend early or late...I don't know if I care to find out except that I have about 1/2 lb left. So Mylo, avoid dry hopping with onion rings, but can I still FWH with garlic?

I have noticed 2 types of Summit out there which may be due to a freshness factor.
I got some from Niko and they where shiny and oily and reeked of Onion, so much it almost made me cry. I used an ounce at 20 min. and another ounce at 10 min. mixed with Amarillo.
Came out nice and Citrussy with a hint of orange.

Hops I got from either NB or B3 where more like Columbus with no Onion aroma at all.
Used 2 oz at 15,10 and 1 minutes for 6 oz total, again, no garlick aroma.

I think Saco de Toro has a few good recipes and some good theories for Summit, do a serach and see what you can find.

Yeah, I saw Saco's posts on HBT. I will play around with them some more. So is the consensus that late summits are ok? Maybe 5 min, 0 min, and dry?

+1, I had a sample taster at my local and could not finish it. As I mentioed earlier in the post, there seems to be a few versions. I have used 6 oz. in 5 gallons of the versions that reminds me of Columbus with no problem.
I have also used the versiosn that is so oniony it almost makes my eyes tear. I have used one ounce at at around 10-15 left in the boil with no onion falvor. Of course I sandwiched this between Amarillo and Centennial :wink:

Not a summit fan personally. The only beers I've had that I like that have summits in them had very subtle amounts for aroma. I find that too much summit in the boil gives a pretty offensive odor/flavor (in my opinion).

Interestingly, as that beer got about 6 weeks of age on it the onion/challot flavor pretty much dropped out. I have a summit apa I am testing now to see if the same thing happens.
