Witbier Recipe Question

Hey all. I've had a crash course in recipe development. I didn't realize how much calculation is involved in all of this. Anyway, I am planning on doing a Mini-mash Witbier and was hoping you could chime in and tell me if everything looks alright.

3.3lbs Northwestern Weizen Extract
1lb Briess Pilsen Light DME

2lbs Bohemian Pilsner malt
1lb White Wheat Malt
1lb Flaked Oats

3oz Czech Saaz plugs 3.5%

Various fruits and spices

I was planning on mashing the grain at 122F for 15mins then bump it up to 154F for 30mins and mashing out at 170F
Boil for 60 mins with hop additions at 60mins, 15mins and boil out, 1 oz each addition
Using Wyeast Belgian Wit

That looks good to me, however I would suggest throwing in a handful or two of rice hulls to your mini-mash. With all the wheat and oats you could get a pretty sluggish runoff and the rice hulls will help with efficiency. Also I'd do a iodine test after the 30 minute mash to be sure you're completely converted.

Iodine test? where can I get Iodine to do it?

You won't need to do an iodine test. What little malt you are using is highly modified, it will convert. The extract is already converted. In the future, if you would like to do an iodine test, you can use a drop or two of Iodophor, on a white plate or bowl. add a tsp of wort, if there are starches present it will turn purple/black. Once you have achieved conversion the Iodophor will stay the say color.
