Hop Flavours

Tue Jan 12, 2010 3:17 pm

I recently brewed a beer with Galaxy hops a 14.9 aa hop from Australia.
I only used this hops as I have tried a beer here and it tases great.
My problem is I have a harsh bitterness in the beer. I think this is caused by the hops added for the 60 min boil.
I am proposing brewing this again and cutting the 60 min addition to a 30 minute addition.

Can anyone advise if I am on the right track? You don't have to have brewed with this hop however someone is sure to have had a similar experience with ither high AA hops

My hop additions were.

60 mins 5 grams
20 mins 15g
10 mins 10 g
dry 20g for 4 days

Here is a link to the HBS i bought the hops from and the details of the hop makeup.

Thanks for the help.

I don't think that adding hops at 60 min is always the problem. I know some hops tend to leave a harsher bitterness then others. I think if you do a shit load of chinook at the start it can be kinda harsh. i do know for a fact that adding them later in the boil does help to reduce that harsh bitterness, although you will have to add a bit more to make up for the lost IBU's.

Did you add a lot of gypsum or other minerals you normally wouldn't have? That can definitely increase the perception of harsh bitterness.

I assume you are brewing a 5 gallon batch? So it's around 30 ibu's.
It's not my f$%*#@g fault!!!!!

Shatt,

Nothing extra was added. I am just going to re brew the beer and change the hops.
The worst thing that can happen is I have 20L (5Gal) of beer to drink that is not
great. The IBU's I got from promash is 27.

Since I posted this I have been drinking the beer. The hop harshness had dropped alot but is still there
It won't be a problem for much longer as the keg is almost empty.

I will post once I get more Galaxy and rebrew the beer.
