Just used it in my first Kölsh...very nice!
Pri: Community Nudity Ale, Magician Red Ale, Berliner Weisse
Bottled: Paxton's Tripel and Dubbel, 400 Rabbits Ale, Cap'n Crunch Amber Oat Ale

I just used it for my first kolsch. Fermented 60-63. Really nice character. Slight sulfer. Nice white wine character. However, krausen never dropped out, even after 3 weeks, (gravity stopped dropping after 7 days). Had to chill it to get yeast to drop. Be sure to give it a couple week lager.

Good tips! Think I will pick up a pack of that and try it in a kolsch (with a small addition of acid malt) and then in an alt!

I much prefer 029 myself, but 2565 is nice enough.

I had no problems with it clearing, probably took about 2-3 weeks of lagering for a nearly crystal clear beer.

It could, but I love 1007, so I wouldn't use it for an alt myself.
