I definitely enjoy your articles in Zymurgy too! Brewed up your pale mild (but boosted gravity - 1046) and it came out fantastic. Liked the N. Brewer addition. Very tasty beer. Do you really brew up a hallucenogenic stout? Keep the good articles coming. I will be racking my pumpkin spice ale tomorrow that I used your base recipe for. Really looking forward to tasting the sample! Thanks Guido!

RedRory,

How is the clarity looking in your boiled pumpkin ale? I mashed my pumpkin this year but was going to try the boil next year as long as clarity is not an issue.

The clarity is actually pretty good on the pumpkin beer. The roast in the oven converts a lot of sugars in the pumpkin and the WLP002 yeast is very flocculant. The upcoming Zymurgy will have an online article on the Imperial Stout that's a mind bender.

Very cool! Looking forward to checking it out. Just kegged my pumpkin spice beer. Added a hot tea infusion back into the keg with some fresh spices and racked the beer on top of 3 tsps vanilla extract. Finished a little high (@ 1020, mashed at 155) but I think with a nice dose of carbonation, the beer will dry out to a nice dessert beer. Finally getting into the season a bit!

brewinhard,

Pulled a test sample last night, and looks pretty clear. I'll make a finally judgment when its chilled. Once again it tastes great, can't wait to keg this baby in a few days!

Definitely let me know after you give it some time in the keg to clear. If all goes well, I think I might try boiling the pumpkin next year. Really looking forward to trying mine carbonated....

The pumpkin ale has been in the keg for a little over two weeks now. It seems a little hazy, but chill haze is a common problem in my beers. It does clear as it warms. I have to say, this is a killer pumpkin beer. I doubt it will make it through the weekend with friends stopping by. Next year I will have to make ten gallons, to make it through the whole holiday season!

I'm running late, usually my pumpkin beer is ready about mid-November. I have this year's pumpkin about ready to bottle in a few days. I went a little high on the O.G. (1.075). I doubt if anyone will mind. The clarity seems to be real good, by the way.

Cool! Just kicked my batch yesterday with the family during thanksgiving dinner. Everyone really enjoyed it! Its a shame that the beer only lasted a month or so. It had cleared fairly well after extended lagering in the keg. I think next year I will try the boil method and compare the two processes.
