"The storagability of the pellets greatly depends on the packaging and cold storage conditions. Pellets should either be packaging in a vacuum pack or soft pack (air is displaced with Nitrogen or mixed gas N2/CO2. During the pelleting operation the lupulin glands are ruptured exposing the soft resins (alpha acids, beta acids and hop oils) to air and subsequent oxidation. Generally, we recommend 2 years in cold storage (27 - 32 deg. F.) however, our internal studies indicate properly packaged pellets can be stored in cold storage for up to 5 years with only a fraction of a percent alpha loss."
