Witbread Yeasts

Fri Jul 10, 2009 5:43 am

I have a clone I'm brewing that is requiring a Witbread yeast strain. Looking through White Labs and Wyeast strains it looks like I have a couple of choices. They are WLP007/Wyeast 1098 or Wyeast 1099. Does anyone have any experience and/or preferences between these choices?

The Wyeast strain can be very tricky to use. Make sure you pitch plenty of healthy yeast and be sure you control your fermentation temps. This yeast has a tendency to want to fizzle out if you let the temperature fluctuate all over the place. 68-70F is a good temp range.

WLP007 is probably my favorite yeast. It attenuates like 001 but leaves a maltier profile like 002.
A buddy did one of my recipes using 1098 and the end product was noticeably estery-er.
Pick between the 2 depending on whether you want the ester in the finished profile or not.
Either way, make a nice big starter, aerate well, and keep your temps controlled. You'll love the results.
