Aroma hops go away?

Mon Jun 01, 2009 5:45 pm

I guess I'm a dumbass, but I had no clue that aroma hops decreased over (apparently a very short) time. My Torpedo clone was fine at 10 days and almost had zilch aroma at 16 days. The case of Torpedo I got aroma hops were almost played out by the last bottle. WTF?

Can somebody point me to the aroma hops lecture?

Thanks,
Charlie

You gotta schwill those APA's, IPA's, and Imperials super quickly to enjoy the delicious aroma hops added! If not, you will miss out!

That seems kind of early to lose your aroma. What hops and hopping schedule did you use?

http://www.thebrewingnetwork.com/forum/viewtopic.php?f=7&t=13902. The final recipe is about 2/3 down the first page.

I dry hopped (all leaf) one week in a glass secondary and swirled each day.

I don't keg (yet). The bottles have been stored in a dark cabinet at room temp.

What does a 45 min hop addition contribute? Maybe move these toward the end of boil for more flavor and aroma but then it may not be an accurate clone. It sounds like the Torpedo lost it's aroma early too. Maybe the best solution is to drink it fresh and fast. :aaron

hop aroma comes from the essential oils of the hops.

those essential oils are SUPER sensitive to oxidation....which is one of the processes that degrade them. other processes being visible light, temperature, and time....in which all three factors that influence oxidation. No matter what you do, there will always be oxygen in your beer (H2O, (CH3)2-OH, OH, just to name a few).

unless you find some kind of preservative to prevent the essential oil oxidation, you'll just have to drink faster.

this is the #1 reason that I can't figure out what's going on at Russian River, granted I'm relatively near the brewery but every single bottle of pliney (or blind pig) i've ever cracked has made the whole house smell like a grow room

RR brewery suggests that Pliney is to be drunk ASAP after being bottled. Read one of their bottle labels and you will see this written there. When I was there in April, I purchased a bottle and they gave me one that was only 8 days from bottling date. I schwilled it down immediately and was greatly rewarded with a one of a kind hop experience. Don't age them!
