Coco Nibs.

Tue Mar 24, 2009 5:17 pm

I just made a recipe from the last addition of the Beeradvocate, an Oatmeal stout that calls for coco nibs and a vanilla bean in the secondary. it says "roasted coco nibs" and mine say raw, i've found some info on how to roast them to taste, but was wondering if anyone in here has ever actually used coco nibs? and to what to expect from them. will they impart some bitterness with a hint of chocolate if the beer is on the sweet side?

thanks for any help

I am have used them in a chocolate stout at the last few minutes of the boil. More chocolate hint than the dried powder. I would also recomend sending an email to JP (Poster boy for gayness) , he mentioned in one of the brecatsts that he did an expirement with dried cocoa nibs.

I take personal offense to people who use coco nibs. Fucking A... You are either using coco powder - or fucking chocolate chips. What the fuck is a nib, and why do I want it in my beer?

Now chocolate nipples... that is a different story. Especially if that recently chocolated nipple belongs to Bub.

Nibs are roasted pieces of cacao beans (chocolate). It's the most basic form of chocolate without sugar or any other components added. I would highly recommend against ever using chocolate chips in beer, since the it can go rancid and ruin your beer..
