Yeah that sounds about right, would be a shame to waste good beer on bottle bombs.

I just listened to the Non Traditional Yeast Sunday Session from back in 2008. Really good listen to hear about different brett strains and how they effect beer differently. Wish I had more space/time for experimentation...

Just out of interest, is there a way of converting gravity points into volumes of co2? For example, if I can guestimate what my final gravity will be can I just bottle when it gets down to 1.00x in order to end up with the correct carbonation level?

I want to say that I've heard/read that 1 point reduction will give you around 1 volume of CO2. Which is why guessing at your FG can be so disastrous if you guess wrongly. I may be totally off, but I'll keep looking to see if I can find where I saw that.
