Which wood to use?

I sourced some alternative wood barrel replicas today - looking forward to trying them. So which sounds better for an IIPA, cherry wood or yellow birch? I also ordered some hard maple but will be using that in a breakfast stout.

This may or may not help but Surly's Moe's Bender happens to age on both Cherry and Birch wood. I have no idea what amounts of each or for how long, but if you enjoyed the "wood" character of Moe's Bender you may want to try using both or splitting batches and blending. Then again the Bender is an Oatmeal Brown Ale so it may have a totally different affect an IIPA.

I didn't get much wood out of this years Moe's. Seemed heavier on the chocolate than in the past. I'm inclined to go with the cherry after tasting the cherry aged Furious. Coincidentally I'm getting the wood from the same place Surly does.

Id go cherry. Just for the simple fact that Ive used it for cooking with geat results.
