I think that the Wit is a good choice - sorghum (and especially the extract which is mostly made from unmalted sorghum)has a distinct tangy, tart taste. The sort of thing that would go nicely enough in a Wit or Saison... But can be really off-putting in an attempt at a lager or pale ale etc.

that's why I have been playing around with millet and other grains... Trying to get away from the sorghum tang because I am trying to reproduce a mega lager for a non beer geek cousin. Sorghum beers just don't taste right.

Yeah, I'm extract and grains brewing on all my batches, I've got a small second floor apt, so not able to make the move to all grain just yet, so I'm not playing around with millet and other malt-your-own type grains. Do you know if the tang from sorghum extract is strictly boil related? Would reducing boil times help with that at all?

How gluten intolerant is he? We are working on extract kits that have less than 5ppm of gluten, brewed with liquid yeast - even less when brewed with dry.

Cool! When do you think that those will be available, JP? Is there anything contributing gluten if a dry, gluten free (danstar, etc) yeast is used?

Soon. Maybe this week.

The tests that we have done in a 100% sorghum extract beer fermented with dry yeast show no testable levels of gluten. Though I have not been able to find out what their testable levels of Gluten are. Some labs are under 5ppm.

For those of you with gluten intolerance, do the doctors give you a ppm range or something? The WHO says you cannot call something Gluten-Free if it has over 20 ppm of gluten in it.

Well, my wife doesn't have Celiac's or an officially diagnosed gluten intolerance. For her it is mostly digestive, so a small amount is likely ok. I tried the gluten free 'wit' I brewed for her, it's actually fairly decent, not fully carbed yet though (bottle conditioning). Whenever the kits go up, if you could post here JP, I'd appreciate it, we have a friend that is much more strict in her gluten avoidance than my wife. What styles will there be in the kits? Our friend used to be a stout drinker before she went GF.
