Maybe try and outweigh the foam negative properties of the peanut butter with foam positive ingredients you can put in your beer.
Although a high hopped beer might be out of the question when brewing with peanut butter, the hops will aid in foam stability as well as melanoidins, high molecular sugars (from wheat ect.), and if you have the ability, using nitrogen. Reinforcing the beer with as many foam positive properties as you can will counteract the peanut butter.
