How big should the vortex in the starter be (relative to the starter size) to get good gas exchange when using a stir plate? Should it go all the way to the bottom? Is half way enough?
Halfway is fine, it really doesn't even need to be that strong. As long as there is a bit of a dimple you're pulling in some gas. Just the stirring action alone is exposing more of the yeast cells to the o2 at the surface.
Thanks for the quick answers. Getting the stir plate has really geared me up to start the new brewing season. Because that's REALLY the season to be jolly!
