Blood Orange Wheat

Tue Jul 08, 2008 8:35 pm

Anyone brewed this from "Extreme Brewing" ?

It says to zest the peals and cut up chunks of blood oranges. Boil both in separate 1/2 gal water and add to fermentation.

Could I just juice the oranges, and add the juice?
Thus no chunks to deal with.
Maybe zest and add to boil at 15 min out?
Then filter out when transfering to fermentor.

By adding to the boil you'll lose all the aroma and essence of the the orange.

Howdy,

I've got one on tap right now. Here's a link to some discussion.
http://forum.northernbrewer.com/viewtopic.php?t=46939&highlight=
I used a recipe from the Maltose Falcons site. I scaled it down and used 10lbs. of Moro Blood Oranges. I juiced and zested them and added that to secondary.
If I were to do it again I would use less zest and more juice. I like it but I've had a few people in the know say it was too "zesty" and that the base beer was nowhere to be found.
It's really different. I'll definately make it again and I wouldn't hesitate to use any other variety of orange in a recipe.

Cheers,
Bob

Brian Hunt from Moonlight just had kegs going around the Bay Area of "Out To Lunch" A pretty tasty gruit beer with Blood Oranges and peppers (amongst other things). Worth tasting if you're thinking of doing a style with Blood Oranges..

Okay, in the tank!

Used 4 oranges worth of zest, and 3 oranges of fruit chunks boiled and pureed a bit.
1/2 of zest at 15 min out, 1/2 of zest at flameout.

Used Hallertauer for bittering, Sterling for flavor.

We'll see!

Still 1 week young, but initial taste test is very good!!

Perfect Orange balance of flavor, tartness and aroma, but not much color from blood orange. I think the oranges were not in the peak of their season, since fruit was only half red, some orange and yellow.

Used Lallemand Munich Wheat dry yeast, and although it fermented a bit warm at 70-75, it has a nice balance, pretty nuetral, and looks like a Hefe, but we will wait for a few more weeks to see if it settles out a bit!

Definitely a keeper!

I picked up all the ingredients to brew this beer the other day.
After some searching, I found out that blood oranges aren't in season, and I can't get them anywhere!

Anyone have any ideas about what would be a good substitution for the blood oranges??

Thanks!
