Alternative for Victory and "Special Roast" malt

Sat Jul 12, 2008 12:38 pm

Hello,

I'm having some trouble getting the right grains for a recipe.

I can't buy either of the two special malts: victory or "special roast" from my local brewshop.
Since they both are in Jamils recipe "Nutcastle" (Northern Brown Ale) - I am looking for alternatives for the two if possible.

thanks,

Well, don't know if Midwest ships international, but you can get 1/2 lb bags of both if needed.

If I were to sub...
Victory = 25SRM Light brown color, nutty, biscuity - so maybe a biscuit, pale chocolate or Brown malt
Special = 120SRM raisin, bread like, chocolatey - maybe Special B, Crystal 120, or brown malt
Or maybe just replace both with Brown or amber malt?

My first try at this finished thin at 1.008 using Nottingham! But still very good! Next time a higher mash! 156 F

Good luck
Todd

The Special Roast I use is 50lov. I'm not sure what non-crystal malt would sub in that lov range.
What's on tap: Cream Ale, Imperial Blonde
Secondary: British Amber,
Primary: APA

I will use your suggestion this way:
Victory: Biscuit [25 SRM]
Special Roast: Special B/Brown Malt (50/50) [200 SRM / 75 SRM]

You are right, color-wise is doesn't match. But I think this way I get the intended taste. At least, I have to start somewhere.
Still, the beer is within range for its style. Mine is 20 SRM where the recipe states 13 SRM.

Thanks again,
can't wait to get brewing ...

FYI, I toasted some 2-row in my oven for 10 minutes at 300F and it came out very similar to Victory malt.
