7.5 - 8 gallons is OK, 10 gallons is better.

A couple suggestions, wait till the fall around Turkey day and get a turkey fryer that includes a burner.

Or look at the difference in prices between an 8 gallon (for 5 gallon batches) vs a 15 gallons (for 10 gallon batches) and you will see about a $20-40 difference. Spend the $40 and get the bigger pot. I wish I had done that before, now I have a massive lobster pot or soup pot, etc...

You can try calling your local brewery. Sometimes they will sell old/damaged kegs that won't hold a seal. They get a few bucks more than the scrap yard would give them, you get a kettle, everybody wins.

www.overstockedkitchen.com has cheap aluminum stock pots. 10 gallon goes for about $45. If you move up to 10 gallon system use that as your HLT.

Thank you for all your input. Would it be an issue to do 5 gallon batches in a 15 gallon kettle?

NO, I do 5 gal batches now in a 15.5 gal keg. No problems at all.

I did 5 gallons last night in a converted keg. It is nice not having to worry about a boil over.
