 Post subject: Boiled Crawfish/ Crawfish Fettucine

I use a 10 gal. aluminum pot, so the ingredient proportions will be based on this size.
Fill pot about 1/2 way with water.

Add:
5lbs. of crab boil
1/4 cup cayenne
4 baseball sized yellow onions, peeled and 1/2ed
6 lemons 1/2ed
2 cups salt
1 quart tomato juice
20-30oz. beer of your choice
1 small head of garlic (unpeeled)

Bring to a boil.
Throw in a couple dozen red potatoes
After 45 mins throw in corn (2 per person 1/2 sized corn-on-the-cob)
15 min later pull out potatoes and corn & put in an ice chest to keep warm

While potatoes are boiling, purge crawish placing them in an icechest or tub, pour a few cups of salt, and fill w/ water. recirc the water once or twice (1/2 hour step in all)
live Crawfish (roughly 5lbs. per person)

Along w/ crawfish add button mushrooms and precooked sausage. (optional)

Once pots. and corn are done throw about 25lbs. at a time into the basket.
Drop into boil, once boil resumes time 8 mins.
pull
drain
repeat
Season w/ crab boil or Tony's to spice
peel and eat,
Sit back relax & have a homebrew




Crawfish Fettucine


1 lb. peeled crawfish tails
1 clove Garlic
1 lb. Fettucine (per 2 people)
1/2 cup Minced Onion
1/2 cup Parsley
2 cups Whipping Cream
1/2 lb. Diced Mushrooms
1/4 cup Ketchup
Parmesean
Crushed Red Pepper

Lightly brown onions, shrooms, and garlic in a small amount of olive oil seasoned slightly w/ red pepper and salt. (or Tony's)
Add crawfish and simmer for 2-3 mins.
Add ketchup, and mix in
Add whipping cream, parsley, parmesean, and crushed pepper.
Reduce for about 8 mins. on med. (depending on how thick you want the sauce)
Toss with about 1.5lb. fettucine


I know it's probably a bitch for some of you yankees to get crawfish, but I'm pretty sure some of the local places out here will ship overnight, so let me know if you are insterested.

That looks like a good Crawfish Fettucine recipe. I used to use Velveeta, but that horrified my wife. Now she makes the cheese sauce.

Those both look good but the boil sounds delicious. I love crawfish. I usually gather them once or twice a year and have a feast. That recipe reminds me of one of my favorite restaurant's called Cracked Crab. Man can they cook up some shelfish. They do the corn, potato, and sausage with your choice of shellfish, tie a bib on you and just dump it right on the table. It fucking rocks!
