You can of course not push the out racking cane into the liquid at first and just run CO2 so as to purge the oxygen.
Don't use a lot of pressure. I use only a few pounds and I monitor the bulge in the carboy cap and I often turn the CO2 off and on. Carboys aren’t rated for pressure. The cap always seems to pop off very easily, but with all the talk about breaking glass I thought it’s worth mentioning. You can pull the feed line off one things start but I’ve found that sudden changes in pressure aren’t good. One time I stopped mid-rake and the out tube drained. The sudden change in pressure lifted a rather large yeast cake up into the beer.
It’s best to have the second container lower and use gravity.
You might want to do a few test runs with water.
