If you've never had bleu cheese with your chili, it's definitely worth a try - it's a great counterpoint to a good spicy chili.

I definitely agree with the masses - real chili has no beans, no large chunks of veggies, etc. However, I've made chili with beans, with rice, with just about any kind of meat you can find, and with a lot of things many people would never think of putting in chili. Some were great, some sucked. Point is, I love me some chili.

Thanks for the recipe BadRock - I'll definitely give this one a try!

My chili has no beans ever, although I do like beans in other dishes. I use cubed up steak along with the ground beef. Also try with buffalo meat. Very tasty and I guess it is better for you if you care about that sort of thing.
on tap: horse feed oatmeal stout, brown porter, honey pale.

In Reserve: oaked imperial amber, dopplebock, imperial IPA,baltic porter.

In fermentors: Imperial stout, APA, brown porter, american brown ale, belgian pale.

Mmmm sounds tasty. Whenever Badrock cooks and I don't have too is great. So beans or no beans....doesn't matter to me :) However I do take responsibility for the beans being added to chili in my house. The first time Badrock cooked chili and it had no beans in it I was quite freaked out. As a former vegetarian my chili was mostly just beans, so a bowl of meat was crazy to me.

I guess I sit somewhere in the culinary middle here...

My two rotating chili recipes are ...

  • Texas Chili (which I am now renaming BN Meat Soup) ... no beans of course and
  • Cincinnati Chili served Five Way which has a layer of beans (plus spagetti, beans, onions and cheese).


I'm planning on hitting Skyline at NHC this year so I can compare theirs to mine.

My chili always has big chunks of onions, lots of meat (usually mild italian sausage), lots of anaheim peppers, a bit of chipolte pepper, stewed tomatoes (no tomato sauce), a couple kinds of bell peppers and NO beans or chili powder. Always wonderful stuff! For a real treat, try making it with ground elk (venison doesn't quite make it, but will do in a pinch).

It is absolute sacrilege to put corn or spaghetti in chili. It might taste okay to those silly easterners, but it ain't chili!
