I think it is time to just try something new I have not done before.
Here is what I have on hand to brew with. I need to use mostly in house stuff but I could make a quick run to the LHBS for something extra.
Malts:
Pale Malt 2 row 55 lbs
Honey malt 22 lbs
Wheat Malt 10 lbs
Crystal 20 2.5 lbs
Cara Pils 2 lbs
Flaked Rye 2 lbs
Pilsen 2 row 2 lbs
Carafa 1 lb
Chocolate Malt 1 lb
Crystal 80 1 lb
White Wheat 1/2 lb
Hops:
Magnum - at least 4 oz
Amarillo Gold - at least 2 oz
Cascade - 2 oz
Challenger - 2 oz
Galena - 2 oz
East Kent Goldings - 2 oz
Fuggle - 1 oz (but they are old and cheesy)
Hallertauer - 1/2 oz (but getting old and cheesy)
Yeast:
WLP008 East Coast Ale
WLP565 Belgian Saison I
WLP862 Cry Havoc
WLP001 Cal Ale
and some dry Nottingham
I also have some bitter and sweet orange peel on hand. Some Lactose, Maple syrup, brown sugar, cane sugar, and maybe a pound of honey on hand.
