I am planning on brewing a Maibock soon. I have Wyeast 2278, but dont think this is the best yeast for the style. I had thought of trying to get a smack pack of 2308 (which is my first choice) but dont think I will be able to get it before my brew date. So, i have two options, brew it with the 2278 -OR- use a couple packs of S-05 I have here. I know its an ale yeast but was going to ferment it in the mid 50's and thought this might be an option.
So I have three choices, Wyeast 2308, Wyeast 2278 or S-05 fermented at low temps.
Any thoughts or discussions?
