How did your SEB turn out without the pale chocolate? I think mine's going to be a bit drier/roastier since I went with American chocolate. I'm still waiting for it to settle in the keg a bit more and do some more force carbonating...I don't think it hits the style guidelines but it's still darn tasty.

i've brewed jamil's esb, his pale mild, blonde, and american brown all over the last month. the blonde was killer. the best light beer i've ever made. so simple but perfect. the brown was pretty nice but i think i messed with the hop shedule to get a less hoppy brew. maybe i shouldn't mess with the pope's gospel. the mild just got kegged last night, and tasted very promising, although once again i messed with it and used a irish ale yeast. the esb is great. right alon with style and getting better as it ages.


i think this week i may try the dortmunder. or schwartzbier. or helles... so many styles, so little time!

I just got my copy of the Jamil/Palmer book and my next recipe pick will most definitely come from it's pages. I'm getting over the initial stages of newbie brewing. "You mean I can put anything that's a sugar in this and it'll turn out alcohol?" That has led to some barely drinkable beers except the ones I did .... TO STYLE! Surprise. I have a new focus on brewing great base beers before I go and F with em. Thanks Jamil.

I'm in the same boat as you and since I don't have a lot of experience with the style and no side by side to compare I'm not sure how it might differ from a SEB with the pale chocolate. As far as taste its screamin'! As you stated probably a bit roasty and drier than the style calls for.

Is this recipe in your book? I'm looking for something like this to brew. Maybe I'll see if I can find this BYO still on the shelves someplace(my subscription hasn't kicked in yet).

Yeah it's in the October BYO with the article that Palmer wrote about Justin. It's also in BCS on pg 138.
I think I've had about enough beer tonight...Now I need some Whiskey to sober up
