Maple Pale Ale

Mon Oct 22, 2007 8:29 pm

So... I'm looking to try out something new, and I maple syrup is one thing I'd like to play with.

Here's a recipe I generated:

Batch Size: 3.79 L
650g Pale Liquid Malt Extract (UCM)
70g Maple Syrup
10g Cascade (45 min)
10g Cascade (5 min)
US-05 Yeast

I am looking for an easy drinking beer with a touch of maple flavour. I am just looking to find out if the above recipe will satisfy my goals. Also, if bottle conditioning, should I use maple syrup to carbonate the beer?

All that g and L stuff is Greek to me but sounds like your on the right track...I'd be willing to bet that your gonna need to bump up the maple content if your looking for a fairly apparent flavor. Maple is a very delicate essence.

well, I'm not looking for it to dominate the beer, just to add a little maple flavouring.

g is grams (28.3 g = 1 ounce)
and
L is litres (1 L ~ 1 qt)

Here is a link to my favorite maple beer...TommyKnocker Maple Brown

They suggest using 8oz. (226g) this gives just the slightest presents of maple. Hope this helps.

I think that Tommyknocker tastes like ass... at least the one I had was FOUL overly sweet... I could barely drink it.

You whinny little bitch....if it didn't take 9 months on a camels back to make it to Illinois you'd probably love it. It is a fairly award winning ale, 1996 Great American Beer Festival Bronze Medal, 1999 NABA Silver Medal, 2000 World Beer Cup Gold Medal, 2002 GABF Bronze Medal, 2002 NABA Silver Medal, 2003 GABF Bronze Medal. 2005 Colorado State Fair Silver Medal.

I think Cascade is the wrong hop for this. I'd suggest you try Liberty, Hallertaur, Mt. Hood, or Saaz. Aim for only 15-20 IBU's, using about 2/3 of your hops at 60 and 1/3 of them at 5 mins. Add all your maple syrup at flame out or else the volatile maple flavor and aroma will boil away.

Good luck and let us know how this turns out.

I wonder just how volatile those flavors and aroma are. Think about how maple syrup is made. It is boiled for days. An extra hour shouldn't hurt anything. Even so, I would probably toss it in at the end too.
