I have tried it. Here's what I did: http://homebrewer2005.blogspot.com/2005/11/bourbon-stout.html. I bought a stout kit. While the beer was in primary I soaked four ounces of oak chips in 8 ounces of bourbon. When I rack to secondary, I added the oak chips. and let it sit for two weeks. (I drank the bourbon!) I kegged it, and let it sit two weeks before I sucked it down. (It was a 10 gallon batch. The second keg sat for two months and was nice!)

I consider the Old Dominion Oak Barrel Stout to be the best beer I've ever had.
