I made this a few times and the neighbors went ape shit over it:
Orange Blossom Honey Hefeweizen
Malt:
4.50 lbs. Wheat Malt
3.00 lbs. Pale 2 Row
3.00 lbs. Orange Blossom Honey (added at flameout)
1.00 lbs. CaraPils or CaraFoam
0.50 lbs. Crystal 10L
Hops:
1.00 oz. Hallertauer Pellet 4.20 60 min.
1.00 oz. Hallertauer Pellet 4.20 30 min.
1.00 oz. Czech Saaz Pellet 3.60 15 min.
1.00 oz. Czech Saaz Pellet 3.60 0 min.
(Adjust your hop schedule to hit between 20-25 IBUs)
Yeast:
White Labs WLP320 American Hefeweizen Ale
Mash:
Do a 131F protein rest followed by a 152F sacc. rest.
(Note: I know a lot of guys hate the 320 Am. Hefe yeast, but the mild clove, banana and bubble gum that this yeast puts out meshes great with the orange blossom honey and makes a great tasting beer. The strong clove from the german hefe yeast overpowers the honey and in this beer, it is not quite as good).
