Guiness Cloned

I've got a recipe for a Guiness clone that my buddy drank within 2 weeks of me giving it to him. Email me and I'll gladly share it. It's an extract with steeping grains, but it works great!

Try this.. give a about 6-8 weeks in the bottle at least..

Duke’s American Stout
Dark, ale, smooth,

10 Amer 2 row
½ choc
¼ roast
1 crystal 120
¼ wheat
¼ municjh
¼ toasted
¼ special

2 Chinook
2 NB
2 Cascade

cal ale yeast V

What the fuck? My OG turned out to be 1.047, which I am ok with, because Promash gives me 63% mash effeciency, which is cool for my 3rd all-grain. However, this past Sunday made 2 weeks in the fermenter. I did a gravity reading and tasting this afternoon, and I am puzzled. It tastes delicious, however, my gravity is only a 1.018? Promash estimated a 1.012 for FG, and usually I get pretty close to the est. What the hell do I do now guys?

1 check your hydro..
2 make sure your sample does not have any carbonation
3 don't worry.. it tastes ok wtf cares about 6 alleged points.

Your 158F mash temp will keep your FG a little high. 1084 attenuates a little less than 1056, if that is what you usually use. I'm not sure what that big pile of flaked oats will do to your FG.

In any case, if the SG doesn't change, then drink up! If it's too sweet for a Dry stout, then call it an oatmeal or sweet stout.

1 Hydro is ok, reads 1.000 at 60F
2 No carbonation, flat as hell
3 I am not worried about the points, the problem is that I bottle, and I am afraid of bottle bombs if it is not done fermenting

Oops, ignore that 158F, I forgot to change it to 152F before I posted that.
If its the same in 3 days, I guess I will bottle, and let it ride. It tasted almost exactly like a Guiness, which is what I was shooting for.
