The 30 qt. pot is enough to do a rolling boil for a 5 gallon batch. But, it's about at the limit. We have to fill it pretty close to the top. Maybe 6 1/2 gallons or a little more. You really have to watch the hot break and the boil over. If you catch it just right you can back the heat off in time to prevent the boil over. Once the hot break has occurred , you can keep a beautiful rolling boil going very easy. We have a 150,000 btu burner.
32 or 36 would be better. Our burner and pot was $48 at Academy Sports. They have a website too. It's a turkey fryer kit.
It's been no real big deal at all, doing all grain. I read brewing for Dummies, and then John Palmer's "How to Brew" firs, and jumped right in.
Watching someone do a brew beforehand helps, too.
