PVPP question

Tue Feb 13, 2007 12:57 pm

Colin said on Sunday that he doesn't like to filter, and for extremely hoppy beers, to eliminate haze he will use PVPP to fine.

The question is, I remember hearing that PVPP is a very non-selective fining agent that will strip just as many proteins and other flavor compounds as a plate filter.

Has anyone else heard this, or; am I way off base.

As far as I know, is strips tannins/polyphenols and _not_ proteins.
