HELLLPPPPPPP!!!! T-6 weeks

hey everyone,
Everyone in my house except me has been sick for the past 3 weeks, not to mention it's actually getting cold here, <30 for about a week. So, St. Patty's is about 6 weeks away and I have nothing fermenting. Here are my questions:
1. If I brew this week, could I get a stoudt ready by March 17?
2. Anyone have a good all-grain recipe? sweet or dry is fine

I have a kegging system but no nitro.
