Good vidio there. That is right at how my boil runs.

The boiloff rate will also vary with the geometry of your boil pot. I have a 7.5 gallon turkey fryer pot that boils off at just over 1 gal/hour while the 40 quart stock pot (wider than the turkey pot) boils off at a little over 1.5 gal/hour. So at your altitude, 2 gal/hour may be pretty close with that keg for a pot.

So it sounds like I'm right on the money then w/ what I'm doing now. Maybe if I cut back the fire a bit I'll get it down to 1.5/hr or so.

Yea it boiled over before I had a chance to turn down the flame :) I hate cleaning that off the kettle.

I would naively expect the evaporation rate to depend on specific gravity, as well. Anybody know if this is true?

If so, that might be part of why you are seeing such a high number with water.

Or maybe the difference would be really small given that wort is only 5-10% higher in SG than water.
