I thought barley wine was good feedback...I'd probably make a sour brown? By Christmas, it'd be sour enough.

I was looking for your thought processes on how everyone else handle winter seasonals not for suggestions on what to brew. I appreciate the response anyway.

Well, "winter seasonal" is a bit broad.
My process is as follows for my "seasonal" and my regular beers.
First, I plan a recipe and get everything together.
I then heat up some water and run the mash. Then, I batch sparge to the kettle. After that, I boil it, cool it, then ferment.
Lastly, I keg the beer and drink it.

You forgot a very important step... well 2 if you count the turtles.... but you made no mention of when you put on the :nutters: . I can only assume this means you put them on before you plan & never take them off until the keg blows. Now if you're like most of us & almost always have stuff in the fermenter, well... I guess my question is this: How does your boss feel about you coming to work every day in the same pair of :nutters: ?
