How long can I leave a yeast starter out?

Sun Mar 03, 2013 4:18 am

Ok so I was brewing today everything was going so well until I look over and see that I left the valve of my kettle open :(

long story short I need to rebrew the batch, but I already decanted the yeast starter. Can I leave it out on my counter or should I put it back on the fridge? Will it be ok for another 12 hours?

It should be fine. The only thing I can think of would be to pour some sterile water on it but should be okay without.
I've done the drain valve thing too. Haven't lost a whole batch but sucks none the less.
Good Luck! :jnj

Thanks for the info!

I can't believe that I did it, I checked the valve before I drained my mash tun, but I must have bumped it. It was only open a crack and I had the hose right in front of my garage door so if leaked out unnoticed. I lost the majority of my first running.

I changed paths, I'm going to brew an ESB that I can enter in the NHC and a local brewery contest (Yards) I just don't know if it will be done in time.

That sucks. No wonder you're so nervous.

As long as your cleaning/sanitation practices are solid, you're completely fine. I really like the suggestion of using water. I frequently do that anyways to make the slurry pour a little easier & leave a little behind. I typically have several jars of prepped water in the fridge at all times for yeast rinsing, so it's just too easy.
