me too...I detest HOAs...what a nightmare having some committee telling you what you can and can't do with your house

sounds like electric is the route for you my friend but I do agree with drezden that you shouldn't be stuck on a 5 gallon batch...get beersmith and you can make them any size you want...I have been doing little 1 gallon sour beer experiments and carbonating in 2 liters with the carb caps and it rules

So on the subject of smaller batches, can I do a 3 gallon ferment in a 3 gallon carboy? Will there be enough room in the carboy for proper fermentation, or is the carboy EXACTLY 3 gallons (up to the top of the mouth)?

'Cause that might save me WAY more money. I'd only have to get a mash tun and carboy, instead of a mash tun, 8 or 10 gallon brew kettle, and new carboy.

Won't be able to keg, though. There's absolutely no room for kegging equipment in my condo :(

I believe 3gal carboys can hold a little more than 3 gal.

I ferment 2.5 gal batches in a 5 gal carboy. I like the smaller batches because I can brew more often. Faster to boil and faster to cool. I have a sweet custom made cooler with a $50 food grade impeller pump so I can whirlpool on the countertop.

I think I may need to find some brewers in Colorado who may be able to advise me on how to build an indoor system. They guy at my homebrew shop is trying to get me to build a top-of-the-line Hermes (sp?) system. I'm trying to do this as inexpensively as possible. I want to keep this as low-key and low-equipment as I can, mostly because of my budget and storage capacity in my tiny-ass condo. But I also want to make tasty, drinkable beer. The only competitions I can afford to enter are writing contests since that will move my career forward. Brewing is just intended to take my mind off of the thousands of rejections I get as a writer. :D
