Congrats on the switch over. I'm sure the AG forum will become a close friend over the next few batches. Thanks Ozwald! Yeah, I've been reading & searching the AG forum for some time now & for sure, I have no delusions on what pitfalls may lie ahead. It will certainly be a learning process. This first session went awesome other than realizing my pot was the exact same size as my boil volume! Lets just say my floor was a bit sticky. Haha, guess I'm not winning any awards for arithmetic on that one! All in all it was pretty painless & I hit pretty damn close to all my projected numbers...win! I'm waivin bye bye to LME in my life. The ORCA is now happily & steadily bubbling away in the Carboy.

Just fired the HLT for an ESB today. First time playing with the Edinburgh strain (WLP028). Gonna be a good one judging from the starter. This wind can suck it though.

Just getting ready to sparge another batch of my version of Denny Conn's Rye IPA. Going for about 1.078 og. This batch is for the Extreme Beerfest here in Omaha next February.

Loving this yeast. I pitched a 1 quart starter made with 1 vial into 12 gallons, looking for that slight yeast strained estery-ness, figuring the trade-off would be a slightly longer lag. I just woke up 9 hours after pitching to 3" of dense foam on top. So much for a longer lag time.

Had a great day here in Eastern Washington with the garage door open and brewing up an IPA for the holidays. Trying to get to know my hop aromatics, so its an all Chinook IPA. 2.25 oz. at flame out, got the whirlpool going and dry hopping with 1 oz. when fermentation slows. God I love 50 degree brew days in December.
