I brewed the pumpkin pie ale from James (basicbrewing) and it turned out great.

Munich or Vienna malt

Tue Oct 03, 2006 9:38 am

Hey guys,
I'm planning on brewing one of these is a couple days.

My recipe looks pretty much like the one at the link posted by GooberMcNutly.

However,

- I'm thinking about using 3 Tbsp of Pumpkin Spice instead of the individual spices.
- I'm thinking about adding 1/2 lb of Munich or Vienna malt to provide alittle extra maltiness or biscuitness.

What do you guys think?

I haven't brewed one of these, but I do know that other folks do use the premixed pie spices.

Most of the pumpkin beers I have tried have lacked body. I think some Munich and/or Vienna would be a good idea. Also mashing around 155-156 would also help a little as folks will expect some sweetness with those spice flavors.

I just kegged a pumpkin ale I brewed last month. The recipe called for 1/2 tsp of pumpkin spice that is made into a 'spice tea' by boiling 1/2 cup water and filtering the pumpkin spice in a coffee filter. I added the tea to the keg. After a few days I have to say it has almost no noticable spice flavor or aroma. Does anyone have any suggestions? Most recipes call for spices in the boil.
