Hmmm. So I don't get it then. Why did the guys at my LHBS say after I carbonate, I should turn the pressure down to 3-4 PSI?

When I get a moment, I'll work through the draft system balancing formula.

It all depends on your line length. If you were using 5 ft of 3/16" tubing at around 2.0 psi friction loss per ft = 10.0 psi. You would need 10 psi just to overcome the friction in the tubing. If you are using something shorter, then there would be too much foam.

It may be that you prefer the taste of your beer at lower carbonation levels (appropriate for English ales). You need to pick the carbonation level for the flavor you desire, set your regulator for the proper temp and forget it. The next step would be to choose the appropriate line length and diameter that doesn't foam too much and isn't too slow.

It may be that they were referring to the pressure at the tap, as it comes out???? With the tables posted, you should be able to figure out what length hose you need coming from the cornie to the back of the tap. 3-4psi on the regulator won't get you anywhere. My beer lines are about 6 feet long.

I do both...depends if I wanna get a beer out quicker.

I printed up a chart and put it right by my kegerator...helps a lot.

I voted *set it and forget it* but I have a caveat. I use a carb stone and I get there in 2-3 days. No shaking, not a lot of patience.
