recarbonating beer?

Hi. I am a 54 year old beer lover who has a problem. Im allergic to alcohol.
A couple of yeaqrs ago i got hives from alcohol so i havent touched a drop since. But.... I Love beer , not the cheap swill either. English and Scottish , irish as well as european and top beers from asia.
I can only drool when i go in a good liquor store and see all the varieties of what i cannot have.
Heres my question.... my daughter suggested bringing the beer to a boil and in turn cause the alcohol to evaporate. but that would kill the carbonation. so is it possible to recarbonate beer? I kinow you can buy a carbonator but i wont without knowing that it will work
My daughter also suggested dropping a small chunk of dry ice in the beer and closing the top quick but that sounds too simple. What do any of you think I willing to listen to all....

I think in theory boiling it would get the alcohol to evaporate out... but what you would be left with probably wouldn't be what you'd want to drink. Even pasteurized beer loses something, I would think boiling it would strip out a lot. Not to mention that alcohol has it's own flavor that is part of beer.

That being said, give it a try. Take a beer you like, boil it, then cool it down in a sealed container that can take pressure and either carbonate it with co2 or drop some dry ice in it (never tried that but it should work). Getting the correct volume of co2 with dry ice might take some trial and effort. See how it tastes. My guess is that it won't be what you want and would not taste good.

well i think i will try it but as far as the other about drinking anyway and living with the hives?..... Nice thought but i probably wouldnt live too long to enjoy more than one beer but thanks anyway

I think you should really try to make your own N/A beer. From what I understand of the process that the big boys do - they basically heat the beer gently, under vacuum. This prevents any melonoidin development that normal boiling would do. The theory here is that while alcohol might boil off at 150 degrees (guess?) at normal atmospheric pressures - it will boil off at 100 (another guess) if you lower the atmospheric pressure it is under. This obviously wil drive all CO2 and hop aroma out as well. Once you pull out all the alcohol, then you can force carbonate it in a keg (and even dry hop it to get some aroma back).

Don't try dry ice to carbonate beer. It's too hard to gauge pressure, and you'll end up with a bomb.
